Here’s the recipe:

1 cup water
1/2 zucchini
large handful of fresh organic baby spinach
1/2 avocado
1-2 tsp finely chopped fresh parsley
2 tsp lemon juice
¼ to ½ tsp garlic powder

fresh salsa
sour cream or plain yogurt (optional)
Freshly ground pepper
Sea salt
Multigrain croutons (optional)
Peel zucchini and cut into pieces to fit in blender. Add zucchini and water to blender with spinach, avocado, parsley, lemon juice and garlic powder. Puree until smooth. Enjoy at room temperature or slightly warmed. Pour into bowls; add salsa and yogurt in middle, with salt and pepper to your taste. Top with croutons, if using. Serves 2.

Spirulina (Blue Green Algae)(Spirulina platensis) – Spirulina is a blue green algae which is found in warm climates. There are many different varieties that grow in oceans and lakes worldwide.

It has been referred to as nature’s most complete food and has many health benefits. Is a great protein alternative for vegetarians as it consists of 65% easily digestible protein.

Spirulina (or blue green algae) also provides tremendous amounts of vitamins, minerals and nucleic acids as well as 10 out of the 12 non-essential amino acids. It is also high in vitamin B-12, essential fatty acids and iron. Spirulina also has 10 times the power of beta-carotene which we get from carrots and produces 20 times as much protein as soybeans growing on an equal-sized area of land.

It also contains active enzymes which help our digestive system to break down fats, proteins and carbohydrates.

Spirulina provides much needed iron for women and children’s health. Iron is essential to build a strong body, yet is the most deficient mineral found in many people. Spirulina is a great source of iron, magnesium and trace minerals, and is easier to absorb than traditional iron supplements.

Long Live the Apricot Eater

Apricots! A quick, easy, yummy snack. And also very good for you. So glad Mackenzie loves them.

Apricots originated in the high mountains of Central Asia. The Hunza people, who live in the mountains of Northern Pakistan, are the longest-living and healthiest people in the world. According to doctors and researchers who studied the Hunza in the 50’s and 60’s, they have 100% perfect vision and diseases like cancer, coronary heart diseases, high blood pressure, high cholesterol, and even appendicitis and gout are unknown.

The Hunza are strong and active and many live to the ripe old age of 100 and some even to 120. Surprisingly their diet is quite simple and the only difference is that they do not eat animal fats. Their diet consists of fresh or dried fruits and nuts, particularly apricots and apricot kernels and their primary source of oil is apricot oil.

Apricot seeds are a source of vitamin B17 and are often used in alternative medicine for cancer therapies. SEEDS MUST BE BAKED BEFORE EATING as they are otherwise poisonous if taken in large quantities.

Apricots are like a mini natural drug store. One handful of apricots contains 100% of the recommended daily allowance of Beta-carotene, an antioxidant which our bodies turn into Vitamin A.

“Baking them actually destroys the enzymes and then they are no longer as effective.  They are not
actually poisonous, but people may assume so because they contain cyanide. However, it is a naturally occurring cyanide that is only harmful to the cancer cell and not the rest of the body.”
